How to cook Kolhapuri masala rice?

Ingredients

  • 6 black peppers
  • 2 cloves
  • 1 cup basmati rice
  • 1 brown cardamom
  • 1 ½ tsp caraway seeds
  • 1 pinch cinnamon
  • 1 large or 2 small bay leaves
  • 1 medium-size or 125g sliced onion
  • 5 green cardamoms
  • 3 small size or 2 medium-size green chili
  • 1 ½ medium-size or 140g tomato, chopped
  • 2 large or 9g garlic cloves
  • 1 tsp salt
  • 2 ½ tbsp ghee
  • 1 ¾ cup of water
  • ½ inch or 4g ginger piece
  • ¼ cup chopped coriander

Recipe

  1. Take a pan and heat some ghee. To this, add whole spices. When they start to aromatize, add them to a blender and make a paste.
  2. Put this paste in the heated pan again and fry onions till golden brown.
  3. When they’re done, add tomatoes to the mixture. Let the tomatoes cook and melt a bit.
  4. Saute washed rice with this mixture. Add coriander leaves and salt.
  5. Next, you can add water to this and stir it all together.
  6. Now cover the pan and cook for 15 min.
  7. After 15 min, you can uncover the vessel and enjoy the rice with some side dish!

And with just that, the staple Maharashtrian rice dish is ready! You can also add soaked cashews to give a rich texture to it.
